First off, DON'T RUSH! Take your time. You won't have any fun if you feel like you are rushing yourself. I know that there is a lot to do, but you don't have to do everything to have fun. It just gives you another reason to go back.
For me AK is not an all day park. You can easily go there, eat in DTD and make it to Circ. If your Circ show is early, eat after. There are some great places to eat in DTD. I would suggest Bongo's. There is soooooo much to do that you don't have to do any "thrill" rides. He will have fun. It sounds like your husband will like Epcot best. Have fun!
