George Miliotes' Wine Bar George To Open In Spring 2018 At Disney Springs
Ron Rupert named executive chef and wine-bar interior details revealed
Master Sommelier George Miliotes has just named Ron Rupert as the Executive Chef for his Wine Bar George. Wine Bar George will be the only Master Sommelier-led wine bar in Florida. Along with featuring a wine list of more than 100 selections by the bottle and glass, Wine Bar George will have an expertly created menu of small plates, sharable plates, cheese and charcuterie boards, and desserts.

Miliotes and Rupert have a history at Walt Disney World Resort as part of the opening teams for the highly regarded favorites of California Grill at Disney's Contemporary Resort. In addition, Rupert was also part of the opening teams of Jiko - The Cooking Place at Disney's Animal Kingdom Lodge, and Ariel's at Disney's Beach Club. California Grill and Jiko are long standing recipients of Wine Spectator's Restaurant Wine List Awards, and with these two at the head of Wine Bar George I think Disney fans, and wine enthusiasts can look forward to another winning location on Walt Disney World property.
The menu will feature dishes nodding to fresh seasonal ingredients with in-house production down to the last detail. The pair hope to offer a new and exciting place for Guests to relax and explore the world of wine, pair it with superior food, and relax in a comfortable location. As a long time wine lover I am super-excited about this new venue.
Small Plates And Seasonal Flavors
Reminiscent of a winemaker's home estate, Wine Bar George will offer 210 seats inside its two-story, 6,000 square foot location. An 'Old World' feeling will inspire the bottom floor's interior, as if Guests are within a classic gravity-flow winery. While upstairs the venue will offer "seating for groups of all sizes, space for private events and sweeping views of Disney Springs."
Wine Bar George is not just about great food and wines, but Guests of all background can expect their experience to include a bit of wine education, served up in an approachable and fun manner. Every future wine lover needs a place to discover the vintages and styles they love, Wine Bar George hopes to be that place.

Wine Bar George is currently in the midst of its hiring process, accepting applications for positions online. We've seen fro other recent Disney Springs openings that this is one of the last pieces to fall into place before opening, and while Disney is currently saying it will be opening in "Spring 2018" we're on watch for an official launch date.

The first time we went to DS this time last year I was not as impressed as my wife was, in all fairness because I really liked PI. However this past December we went back and I have to admit I enjoyed it more. DS has quite an impressive number of eating choices and stores (and growing). During the same trip we went to US Citywalk for the evening and we noted that it just didn't compare to DS, especially when you have to pay to park. It will be interesting to see if and how US responds.
