Exposition Park is a simple space on the West Side of Disney Springs nestled between the West Side Starbucks and Bongo's. The Mac & Cheese Truck, Fantasy Fare, and Springs' Street Tacos share the space with a scattering of tables and plenty of planters for folks to sit on while they nosh. Every evening live music fills the air from a variety of talent that comes to perform in Exposition Park.

Like any good food truck the Mac & Cheese Truck has a pretty simple menu, they do one thing, and do it well. Several varieties of rich, creamy macaroni and cheese are topped with fabulous ingredients that give each cup an extra splash of character.

It was hard to resist the Barbecue Brisket Macaroni & Cheese. The creamy cheese sauce coats cavatappi with a rich layer of Cheddar and Smoked Gouda. That yummy comfort food base is then topped with a hearty Beef Brisket, Crispy Onion Rings, Barbecue Sauce and a sprinkling of Chives.

Overall Barbecue Brisket Macaroni & Cheese is a delicious choice that will have you wanting to return to this Food Truck another day. While it is great any time of year, when autumn and winter breezes blow across the lake, there's nothing better than a tummy full of warm and hearty macaroni and cheese.

Katie was our official Mac & Cheese taster on this visit, ordering a Barbecued version at both Flame Tree Barbecue in Disney's Animal Kingdom, and here. While she said both were really good, the Disney Springs Food Truck version edged out Flame Tree's for its straight forward homestyle goodness.
