I'm a huge dork I know, but are there certain areas where you'll be likely to meet some characters, like I dunno, perhaps some princesses

There's lots! The key is more avoiding the crowds than finding the characters. If you're looking for princesses, you can do a meal, like Akershus. But since you already have your ADRs done that's probably a non-starter. Storytime with Belle can be a decent place, but that's more of a show.
Jasmine is oftentimes hanging around in Morocco in Epcot for pictures.
I'll edit this and update with more later.

I know, psh. Who the heck wants to see Disney characters.

Yeah I don't think anyone's going to make fun of someone for liking Disney characters here.
There are a couple more that show up in Epcot: Belle and Sleeping Beauty sometimes in France. Snow White in Germany. You can also catch Ariel in Ariel's Grotto in the MK if it's not torn down by the time you get there.
As far as other breakfasts there are also Cinderella's Royal Table and 1900 Park Faire. That's all that comes to mind on princesses. If you want other characters, I got lots more!
Sure shoot!
I think we may make ADR's for the Chrystal Palace to visit with Pooh and friends. It's presently closed for refurbishments, but they're supposed to be completed by the middle of this month.
Sure shoot!
If you like the old-school characters, Mickey, Minnie, Donald, Goofy (and Pluto!), Camp Minnie-Mickey in Animal Kingdom can be a bonanza. We've gone in there in the morning and had barely any wait for all the characters. Down there when it first opens is a great place.
Crystal Palace has the Pooh characters like LifL says, so if you happen to be eating there you can get a pic with Eeyore!
As far as non-dining options go, Camp Minnie-Mickey is my pick for the easiest place to get pics with characters.

Friends who don't like Disney are friends who aren't crowding the parks. YAY!!
