when u make your adr's let them know they are very good at accommodating for special dietary needs. as far as qs meals i have no idea if they do gluten free yet but i would not be suprised if they did
Well here is one web page you may be interested in. I don't know how helpful it will be. Gluten free.
This should help!
They have been pretty good when I have called about my fish and seafood allergies. There is even an email address if you have questions.

Ok so my husband has recently changed over to a gluten/dairy free diet. Disney is incredible for being helpful for this. We called and told them my husband needs and they attached a note to all our dining reservations. Last time we were at Disney the table next to us had this dietary need. The Chef came out and spoke to the people. They have an isolated area of the kitchen where they cooked gluten and dairy free foods. He had numerous options that he seemed very excited to personally cook for the people and didn't leave the table to do so until they were happy with what he had for them. There are articles on the Disney food blog and online you can access about Dining at Disney gluten free. Apparently even Casey's Corners has a gluten/dairy free hotdog and bun which has my husband doing back flips since we really enjoyed those hotdogs last time we were there. Disney also has a whole line of gluten free products. We were also told to tell the people behind the counter at the quick serves at your resort about your allergy and they will get the chef who will come and explain what you can have ....this is also at buffets etc. Don't be shy or you may miss out on something you thought you couldn't have. All the chefs at Disney are well educated about intolerances and are there to accomodate you. Hope you have a great trip.

One of the students we took on our trip two weeks ago had celiacs and we tagged it on our reservation and had the same experience- the chef came to the table and talked directly with her. Since it was Ohana which is a set menu and family style, he brought her out special, separate food that she said was delicious! Disney is great at accommodating since they want everyone to have a great experience!
I am a celiac call before your trip they will tag you in the system as having a gluten allergy. Call and make sure every reservation you have is tagged with this.
I cant eat gluten, soy protein, beef, lavender, kiwi, and I eat low sugar, low fat, and low meat. Disney is easier to eat at than my own house!
