I like the idea of the dinner presentation. But, that might be because I love food and anything associated with it, so presenting me with something sparkly along with food is pretty much the height of romance in my book.
If you go that route, when you set it up with the restaurant, make sure you request a table to the side, or out of the way. Artist Point is a gorgeous space, but it's a tad bit....cavernous. If you're seated in the middle of the room, it can diminish the romance factor a bit.
Another thought is the boats that cruise around Bay Lake between the resorts. They run until 11pm-ish, I believe, and it's fairly easy to get a boat to yourself (and the skipper, of course) later in the evening.
I really love the Wishes! idea too. Although, I would suggest waiting until right after the show, rather than during. Picture the finale, then you tell your bride "Would you look at that, my wish came true!" or something like that. It will also mean that the lights are turned back up...all the better to admire her new bauble.
