It's finally down to the final couple days!
Thanks to all the wonderful advice and tips from this forum, I feel confident that I have all (or most of) my ducks in a row!
Small backstory:
Bill and I were married 07/07/07. We didn't take an actual honeymoon at the time. We had quite a few rocky financial years, but after A LOT of hard work and lots of long hours - we're finally able to have a proper honeymoon/vacation!
I have been to WDW once, over 10 years ago for a day and Bill has never been. I know that as soon as we cross into Disney territory he'll be hook! The one thing I'm most looking forward to is watching him relax and have the best time of his life! He sooo deserves it! (ok, gooey gooey mush mush - sorry you had to witness that)
Here's the plan: (Once we're at WDW, everything is subject to change, except our ADRs)
Day 1 - Head out on the road for our very long drive to WDW from the lovely suburbs of Chicago - stopping in Marion, IL to drop off our furry son, Buddy (a yorkie) to his "Aunt" for his weeklong vacation. Back on the road, planning an overnight in Tifton, GA just to get some sleep.
Day 2- Finish our road trip to arrive at our resort, Port Orleans Riverside Royal Guest Room! Hoping to head over to DTD to browse around and stop for lunch at Earl of Sandwich. There's suppose to be an RC Model store where Bill can build his own custom RC car - this is a MUST for him! 8:45p Carriage Ride
Day 3 - ADR for breakfast at Kona Cafe - we are addicted to Kona coffee - According to the crowd calendars - Epcot is the park to visit this day. Wish it was MK, but I'm really looking forward to the Flower and Garden Festival too. - Illuminations
Day 4 - MK!! for the day - hoping to take a midday break for a nap or rest by the pool. - then ADR for dinner at Prime Time Cafe (Bill's pick, he loves stuff like this - I'll be cowering in the corner with my hand shading my eyes 
) - Fantasmic
Day 5 - HS for the day, same hope for a midday break - then ADR dinner at BOG!!! (this pick is all mine!) I understand that the Beast probably won't be there, but IF he is - I'm gonna hug him!

Day 6 - ADR for breakfast at Whispering Canyon (another Bill pick) Probably Epcot during the day - midday break - unsure of which nightime show - may-be Wishes?
Day 7 - Road trip to the Beach - may-be Cocoa Beach or New Smyrna Beach - I CANNOT go to Florida and not go to the beach! - Just for half a day - then back to MK (?) - unsure of which nightime show - may-be Illuminations
Yes, we plan on doing a lot of park hopping - No, AK is not on our schedule (at least not now)
One big giant hitch - my Disney Surprise for Bill (we each planned a surprise for each other for when were are there)
- I got him the ride along at the Richard Petty racetrack (Vettelover suggestion!)-
It's not in the plans, because I can't tell him! 
Day 8 - Check out day, perhaps another stop in DTD - then back on the road towards home! On the return we hope to drive straight through to Marion, IL - spend the night there - and then head back to our home the following morning.
One thing I keep telling Bill is that I don't want to stress about having to do and see everything - when were tired, we'll sit down - when we've had enough for a day - we'll go back to the resort. Whatever we don't get to, we'll plan on for our next trip!

) We also have a list of cupcakes and quick service restaurants to try out. I hope we're not being too ambitious!
