Good question, Ryry.
Off the top of my head I can think of a few. For others I need to get the surgical saw and pick people's brains. Whatever they are, they'll probably involve food.
1. Go during December and check out the Christmas decorations at the resorts, especially @ the Grand Floridian (e.g., a large gingerbread house).
2. Go on a resort tour. These are usually early in the morning on specific days of the week.
3. Marshmallow roast, campfire and a Disney movie each night at Fort Wilderness.
4. Miniature golf @ WinterSummerland (next to Blizzard Beach waterpark) or at Fairways or Fantasia Gardens (near the Swolphin (Swan and Dolphin resorts).
5. Resort hopping; that is, visiting resorts other than the one at which you are staying.

A resort tour? I'm not familiar with this. I'd like to learn more about this.
After this last trip I will say visiting the Spa and getting a massage. It was amazing mid trip and really broke up the week for us.

- Earl of Sandwich for lunch
- Goofy's Candy Company for a make-your-own chocolate dipped creation
- Wetzel's Pretzels
- Ghirardelli's for a sundae and a free chocolate square
- World of Disney and the Christmas Shop
Resort hopping
Riding the Monorail just for the fun of it
Walking the boardwalk and getting something from the bakery or Beaches & Cream (shocking - food stuff again!)

I always go resort hopping and take a monorail ride. We like to do the "Monorail Crawl" and drink our way around the Seven Seas Lagoon. It's not quite as intense as drinking around the world, and there are a couple of "Cupcake Crawl" stops we can make on that route too! We always do a resort Character Breakfast as well and sometimes take a boat ride. DTD is kind of a given as well
We always do a Poly Beach movie and fireworks evening - last trip we did it twice! Beaches and cream, it wouldnt be a WDW trip without a visit there to get an ice cream
We also really enjoyed the balloon at DTD, i think I would do that again, maybe not on the next trip but the one after unless we could go up at night to watch some fireworks, that would be amazing
