I have annual passes. so for me it is not an issue, however whether an AP or reg. admission tickets I could not even begin to imagine having to limit ourselves to one park per day. I think the vast majority of our forum members here would find a Park Hopper pass a nessescity (I think I spelled that wrong but you get the idea ). Seriously I would say Park Hopper definitely, especially for getting into various parks for dinning, and the longer the trip the more I think you will need it.
I think Vettelover said it all Natalie. We have always gotten the Park Hopper just to be able to have the choice of hopping from one park to the other, and we do, a lot, especially for meals , shows and fireworks.

I personally can't imagine going without a park hopper. We really like to play it by ear AND we like to bop in and out of the parks for dining and fireworks like VL said. Must have for us.
We need the park hoppers as well. Our touring style is to pop into a park for the relatively less busy hours in the mornings and evenings, then be back at the pool or i the room in the busy/hot mid-afternoon. We usually start in the EMH park and end wherever we have dining reservations, so although we could do the uber-planning to make sure that worked out, we always like to keep options open.

DH and I have never gotten PHs and we have enjoyed all of our trips very much for 5 years (once or twice each year). We plan our park days for lowest crowd levels (based on TGM) and do 1 park 1 day. We usually do an afternoon break and return to the same park in the evening.
Last Feb, I thought that it might have been helpful if we'd had PHs. It was a traditionally slower time of year, so the fireworks and shows were only offered once during our stay. We (and everyone else) went to MK on the day Spectro was running, DHS the day of Fantasmic!, etc. After the fact, we realized that it might have been better to have spent those days at a different park and go to MK just in time to secure a spot for Spectro. Next trip, we will get APs, so it is no longer a question for us.
The nice thing is that you can add the hopper option at any time. So you could NOT get it and then if you do want to hop, you can add it at that point.

I personally couldn't survive without a Bus Hopper--er, Park Hopper--because of fireworks shows and ADRs. I think Vettelover has summed up nicely the feelings of most on this website.
