Recipe Thread

I noticed we didn't have a recipe thread around here and thought it'd be fun to create one! I don't think we have to isolate it to Disney recipes, but it's fine if you want to put up some of those, too!

These are some of my family's favorites (don't let the healthy-sounding name fool you!):

Those look great. Reminds me of some my mom used to make, too. Maybe I'll make DW a batch this weekend -- we're fans of no-bake stuff around here.

Great idea, Annie! Here's one of my favorites:

Cold Strawberry Soup from Grand Floridian:

Cold Strawberry Soup

2lb. 8oz. strawberries(frozen variety,thaw with juice)
16 oz Heavy Cream
2 oz. Sour Cream
3 oz. Yogurt
1/2 lb. Fresh Stawberries
Mix thawed strawberries, heavy cream, sour cream and yogurt. Beat slowly until well mixed and a smooth consistency. Chill, shake well before serving. Add fresh strawberries halves as garnish.

I tried making the Carmody au gratin potatoes from the Yachtsman last week. Couldn't find Disney's recipe, but this is a recipe from the place that makes the cheese used in the recipe so I think this might be the recipe Disney uses. I just got a 1/4 wheel of cheese from them and am going to try to make this. It was so good!

Carmody Cheese & Potato Au Gratin

2 teaspoons olive oil
1 cup fresh leeks, washed and cut into thin rounds
1/2 cup fresh fennel, sliced 1/4 inch thick
2 cups red potatoes, sliced 1/4 inch thick
2 tablespoons fresh Italian Parsley, chopped
7 ounces Bellwether Farms Carmody Cheese
1 cup cream or milk of choice
Salt and pepper to taste

Preheat oven to 350 degrees. In a large skillet, heat olive oil and saute leeks and fennel until golden, approximately 10 minutes. Season with salt, pepper and parsley. Brush an 8 x 12 inch, 2 inch deep baking pan with olive oil. Arrange potato slices in baking dish. Sprinkle with half the cheese and evenly spread leek mixture over cheese and potatoes. Sprinkle remaining cheese and drizzle with cream. Bake in oven for 45 minutes or until golden on top and potatoes are completely cooked. Serve hot and enjoy.
