As suggested by Caitiesus, since a lot of us seem to be planning to diet/eat healthier this year (let's see if we can do it!), and because everyone loves food anyway because food is amazing, here is a thread for us to share recipes Smile

They don't have to be healthy or anything, but I'll start with a healthy one...

Here is my recipe for a healthy chickpea curry (serves 2-3 people):

Note: quite a bit of it, such as herbs, chilli, garlic, yogurt and coconut can just be done to taste. You don't even have to use both yogurt and coconut, but I would recommend at least using one of them though to thicken up the sauce.

Fry one whole chopped onion for about 5 mins at a medium heat ...(or until it's going yellowish-brown)

Add chopped garlic and a small green chilli and fry for a few mins (garlic and chilli is to taste, but I use a couple of cloves minimum and a whole small green chilli). Adding a bit of ginger here is also good, but tbh I can never be bothered.

Add approx 2 teaspoons cumin, 2 of tumeric and 1 of coriander and fry at a low heat for a couple of mins (not too long because if you burn them they will taste bad). Don't worry about the amounts being exact, I just tend to wang a load in at vaguely those proportions until it tastes/smells right.

Add a tin of chopped tomatoes, about an inch of a block of creme of coconut and a couple of spoons of plain yogurt. Add a chopped pepper/peas/spinach/whatever if you want some veg. Leave it simmering at a low heat for about 30 mins/as long as you can be bothered really, giving it the odd stir.

About 5 mins before it's finished, add a tin of chickpeas.

Serve with rice and/or naan/roti/chapatti/whatever your favourite bread is. Obviously to keep it healthy go for boiled rice or roti, but it's up to you. Also, it's nice if you stick a dollop or 2 of the plain yogurt on the plate. It's particularly good if you find the curry is getting a bit hot for you.

Yum! I have a ton on my laptop I'll have to put up here..but..I can't..umm..promise they are all healthy.

That sounds delicious..ive never had curry!

Curry is SO nice, I could eat it everyday! And it can be very healthy if you make it yourself and use similar ingredients to the ones I suggested. I use olive oil instead of ghee - that's the main thing that makes it healthier than takeout! Is Indian food not really big in America? I remember when I worked in Florida I didn't see a single Indian place (granted I wasn't looking too hard though)

Indian is big in some places -- not as big as in the UK from what I hear, though. It seems everyone , I know either loves it or can't stand it. Personally, I can't get enough of it. I've never made it on my own, but we have a restaurant near here that's fantastic. There's a big Indian culture near here, and the students I've taught who've tried it swear by this place.

Curry is definitely a divisive issue. Although if you want to get someone to try Indian food, I'd suggest to start with some easier dishes and work up to curry.

I will share one of my favorite recipes. It isn't really healthy, but it is delicious and makes for some GREAT leftovers.

Ham and Noodles

I ham slice (vacuum packed-usually about 12 oz.) or get a thick slice at the deli
1 stick of butter
Italian bread crumbs
12 oz. package of extra-wide egg noodles

Put water on to boil in large saucepan.

While waiting for water to boil, melt butter in large casserole on medium heat. Turn burner to lowest temperature, add bread crumbs until most of butter is absorbed. Let bread crumbs simmer for a few minutes.

Cut ham into bite-sized pieces. Add to bread crumbs and stir well, continuing to cook at lowest temp.

When water is boiling, cook noodles according to package directions, using the shortest time given. Drain noodles well, then add to casserole and mix well.

Cover and bake at 325 for 30 minutes.

Serve with apple sauce. Jason didn't believe me that the applesauce would go well with it, but even he agrees that it is!

I have had Indian Food before but not very often..I live in the capital of my state and I think there is one Indian restaurant in town.

Here is one I found that is good and good for you:

Potato Soup
(makes 2 - 1 cup servings - I doubled it)
2 cups frozen hash brown potatoes, partially thawed
1 (14 1/2 ounce) can fat-free chicken broth
1/3 cup finely chopped onion
1 tablespoon all-purpose flour
1/3 cup skim milk

In medium nonstick pot, heat hash browns, broth, and onion to a boil, reduce heat, and cook, covered, about 8-10 minutes. In small bowl, whisk together flour with milk. Add to potato mixture and bring to boil. Reduce heat, and cook, stirring, for 5 minutes or until thickened. For thinner soup, add more milk.

This is a really good game food recipe i had it at a friends house & it was really good making it tomorrow for my husband as he eats sleeps & breathes football LOL

Buffalo Chicken Dip

2 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing
3/4 cup pepper sauce (such as Frank's Red Hot(r))
1 1/2 cups shredded Cheddar cheese
1 bunch celery, cleaned and cut into 4 inch pieces
1 (8 ounce) box chicken-flavored crackers

1.Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

these are super super easy and well.... healthy? I am sure there are worse things LOL
Jiffy Cinnamon Rolls

2 cups flour
2 T sugar
4 tsp baking powder
1 tsp salt
1/4 cup cold margarine
1 cup cold milk

1/3 cup margarine, softened
1 cup brown sugar
1 T cinnamon

Combine first 4 ingredients. Cut in margarine until crumbly. Stir in milk. Turn out on to llightly floured surface. Knead 8-10 times. Roll into rectangle 1 cm thick and 30 cm long. Width will vary.

Mix brown sugar, magarine and cinnamon together well. Drop 1 tsp into 12 greased muffin cups.
Spread remaining cinnamon mixture over dough. Roll up like jelly roll. Cut into 12 slices. Place in muffin tin. Bake 400 for 20 -25 minutes. ( I find just barely 20).

Glaze 1/2 cup icing sugar, add just enough milk to make a glaze.





Walnut toffee.

1/2 cup walnuts in bottom of 13 x 9 pan

1 1/3 cups brown sugar
1 cup butter

Use a frying pan. Melt the butter. Add sugar. turn heat down as soon as boiling begins. Stir constantly. 9-12 minutes. Pour quickly over walnuts.
It turns just a bit darker in color and becomes more smooth. (You can tell when it still looks sugary).

you just have to watch the texture but it's a favourite for Christmas and it such a great texture.

I made this for a Super Bowl Party once and it was such a hit! It is soooo good!

Yum! Looks and sounds like a praline. Delish! Thanks for sharing!

Here's my butternut squash bisque. Definitely healthy, but can be made less so if you prefer cream to evaporated milk. Out of this world if I do say so myself! And if you like a little texture, puree the squash before adding to the other ingredients, and skip the immersion blender. I'll see if I can hunt up a pic - or I'll take a pic the next time.

1 goodsized (not too big, not too small) butternut squash
1/2 large yellow onion, diced
1 teaspoon dried ginger (or 1 tablespoon fresh)
olive oil
1 can chicken or vegetable broth
1 can evaporated milk OR 2 cups half and half or heavy cream

Preheat oven to 400. Split squash and clean out seeds. Rub the cut sides with a little oil, and sprinkle with salt and pepper. Roast, cut side up, for 30 mins. Flip over, and continue to roast until tender (probably at least 15 more minutes.)

Meanwhile, in a medium to large saucepan, saute onion. Once transluscent, add ginger. Remove squash from skin to saucepan. Add chicken broth and cook until reduced by half. With an immersion blender, puree squash. Return to low heat, and add milk. Heat gently. Season to taste. Serve immediately.

Can be garnished with a little yogurt, or pumpernickel croutons, or crisp bacon or crabmeat.

I'm loving these recipes! The soups sound especially good right now as it's c-c-cold!! Hmm... potato or butternut squash...

I will, I promise. I'm suffering from laptop conversion right now! All of my data files are on my old laptop, and I'm always in too much of a rush to transfer everything over. I grabbed that one because it's a fave - but it also happened to be in my email Smile I'll try to post more, though. We're always looking for healthy and delicious recipes, especially recipes for "Meatless Mondays" - one day a week we try to go meatless. We've come up with some good options.
