I would love to know how to make beignets though. At POFQ, they sell them and they are delicious! I just need a giant deepfryer and a lot of dough.
Basically, yes, that's the secret to good beignets

Basically boil yams for about 30 minutes (peel and cut them up into cubes)
Put them into a blender with a stick of butter, some cinnamon and add milk to get the thickness you want.
It ended up being super simple, and it tastes great to be honest. The hard part is cutting up the yams... they are extremely tough to cut through since they have no moister really in them. I can go more into specifics on the ingrediants and such, but it really is super simple. It goes GREAT with pork chops in my opinion. But the key is a lot of butter.
Mase - rather than peeling, cubing, and killing your hands, try roasting the yams instead, in their jackets, then scoop out the flesh and proceed as before. The taste is richer, more concentrated, and you get to skip the blisters! (We learned this trick years ago for our white sweet potato casserole that we make for the holidays.)

Fufu - is that the juice that everyone loves so much? Care to share your recipe?
Is the juice you're thinking of POG?

Isn't that the key to all food?
I'm not sure...I haven't had the pleasure of Boma. It's the juice that Bella threatened to attack someone over if she didn't get it fast enough.
