Beehive Cheese Creamery "SeaHive"
This hand-crafted artisanal cheese is a true expression of our local flavors; milk, salt and honey and the love for cheese making. SeaHive is hand-rubbed with Beehive wildflower honey and local Redmond salt. The honey is harvested from a local farm where the bees visit wildflowers and fruit orchards. Fromager d'Affinois de Brebis
Fromage d'Affinois de Brebis is a soft-ripened pure sheep's milk cheese with a creamy texture and a sweet taste. Fromager de Brebis is a soft bloomy rind sheep's milk cheese from the Rhone-Alps region in France. Produced by the well-renowned Guilloteau creamery, it is very similarly to the other sheep-milk bloomy rind cheeses produced by the company. The cheese is produced in a rectangular shaper and also hails the name Le Berger de Rocastin. The paste is mild and rich while the rind provides a flavor and texture this is savory and builds complexity.

Belle Chevre Fig
For almost 20 years Belle Chevre has been hand-crafting fine French style goat's milk cheeses in rural Alabama. A wayward Alabamian, Tasia Malakasis, a woman with a grand appetite for Chevre (the French word for goat and pronounced 'shev) founded Belle Chevre and developed a winning recipe that has, to date, garnered over 50 national awards from American Cheese Society and other famed institutions. Tasia, ever passionate about food, fell in love with the product, and came back to Alabama to learn the art of cheese making and finally persuaded the owner Emeritus to let her be the next generation of Belle Chevre.This creamy goat cheese is combined with flavorful fig preserves for a healthful and perfectly balanced cheese.

Rogue River Blue
This is a seasonal cheese and is only available in the fall months. The Rogue River Blue is naturally rinded. This aging process imparts flavors from the Rogue River Valley. These naturally occurring molds from the terroir impart flavors of wild ripened berries, hazelnuts and pears. For preservation, it is wrapped in grape leaves from the Applegate Appellation. The grape leaves are soaked in Pear Brandy and tied with Raphia.

I'm craving Chinese food, so I think if I were in Disney tonight I would give Nine Dragons a try. I haven't eaten there before, but this is what sounds good on their menu to me...

  • Cucumber Salad - Lightly spiced and refreshingly sweet and sour
  • General Tso's Chicken Buns - Steamed Chinese Buns with Battered Fried Chicken Breast and General Tso's Sauce
