It wasnt. The head was really crispy and crunchy. And the whole fish (red snapper) was delicious.

That is from a Mexican seafood restaurant near here called Las Islitas (formerly Las Islas Marias). It's one of my favorite places to eat. It is not your typical Mexican fare, and some of the items are quite authentic. A lot of Mexicans eat there, which to me is a good thing.
This dish (Huachinango ala natural) is one of my favorite dishes (the other being their "7 Seas Soup"). For barely $15, you get a whole red snapper! Can't beat that!

Hey Teach!! Great idea, I have wished for everyone posting to do that for a long time. Otherwise you may have to resort to the ruler across the knuckles method.
