Over the past couple of years Imagineers at Disney's Animal Kingdom have been hard at work to develop new concepts and experiences to breathe new life into the Park. Finally the immersive wildlife Park that's not a zoo is coming into its own and taking center stage with a full slate of exceptional experiences. I'm not even going to try and list all the reasons I love Animal Kingdom, but I will absolutely share the four best reasons to be sure it's in the plan for your next Walt Disney World vacation.

Happy Monday! We're starting the week off with a few news tidbits including an extended sneak preview for the new Disney/Pixar film Cars 3 and the debut of the Magic Kingdom's new nighttime spectacular.

We like our top 5 lists here at WDW for Grownups and today we're going to check out our top five favorite spots for Mexican food (and drinks!) when you're at Disney World. The majority of the locations (four out of five) are located in Epcot, but you'll also want to drop by Disney Springs.

On your next visit to Pandora - The World of Avatar be sure to stop by The Rookery inside Windtraders. That's where guests will be able to choose a banshee of their very own.

When visiting Pandora - The World of Avatar guests will find a fast-casual dining spot and a drink kiosk, serving food and drinks inspired by the world of Pandora. Satu'li Canteen and Pongu Pongu are both slated to open May 27.

When Pandora " The World of Avatar opens later this month at Disney's Animal Kingdom, guests will have a chance to fly on the back of a banshee on the totally immersive attraction Avatar Flight of Passage.

Amongst the recent dining additions at Disney Springs is a quick service spot to stop by for a perfect pizza pie made just for you. Blaze Fast Fire'd Pizza is serving up custom-built artisanal pizzas, and freshly made gourmet salads that suit each guests taste. While Blaze is a chain fast-casual restaurant, it makes for a great fit at Disney Springs.

The 2017 Epcot Food and Wine Festival doesn't start until August 31, but we're already getting some preliminary details. The Festival will run for a record 75 days and it will include a record 35 Marketplace Booths!

The Na'vi River Journey is one of two new attractions opening May 27 at Pandora - The World of Avatar in Disney's Animal Kingdom. This family-friendly attraction takes guests on a "river journey unlike any other."

We all know that dining at the Walt Disney World Resorts can be an extraordinary experience. That especially holds true at the variety of venues on Disney's BoardWalk. As much as I love to dine at the wonderful table service venues, sometimes I just want to pick up a quick bite on the go, and that's when I turn to the BoardWalk Bakery.
